My current goal is: Improve at correctly capturing the overall proportions and structuore of the equine form as well as a more realistic look.

This is awesome, especially when doing it in pen, and certainly captures the essence of the animal, and the proportions are great! My only piece of advice would be to draw really obvious muscles and muscle groups, as that has helped me when I draw human anatomy. This will really secure the proportions and understanding of where everything goes and what links to where so you can work on more drastic poses. Once you understand the anatomy underneath the skin, the skin seems to make more sense, y'know??
